Just wanted to offer a suggestion for Mrs. PN's baking and your sugar preps. Did you know brown sugar is quickly made from granulated sugar and molasses?
Molasses keeps indefinitely, boosts iron and makes brown sugar. When you need brown sugar, just add molasses to sugar a little at a time to desired darkness.
Ratio to start...
Approximately 1 tablespoon molasses to 1 cup sugar
(Use white or cane sugar)
Add more molasses for recipes that call for dark brown sugar.
That's it.
Bonus... in the depression era folks would add a spoonful of molasses to a glass of milk. The iron helps when meat is scarce.
***True molasses is better for baking, not blackstrap. Blackstrap is more concentrated and can interfere with consistency and flavor of recipes. Reserve blackstrap for livestock feed, fertilizer, iron supplementation and non baking recipes (unless specifically called for). I believe 1 Tbsp true molasses has about 1 mg iron while blackstrap has approx 5 times this amount.
